I spoke to my local running club (a shout out to CRC!) last week and brought these snacks to my talk. Its ALWAYS important for endurance athletes to keep healthy snacks on hand, right?

Everyone loved these…so I said I would share the recipe here on my blog. It only took me about 15 minutes to whip these up.

For me, I love to stick them in the freezer but most of you will probably just want them refrigerated.

Protein Bites (original)DSC_0046
1 cup oats
1 cup flaxseed (ground)
1/2 cup peanut butter
1/2   cup coconut flakes
1/3 cup honey or agave
1/3 chocolate chips
1/4 cup protein powder
1 teaspoon vanilla

1 ½ c of oats
1 ½ c  flaxseed
¼ c almonds
½ c peanut butter
¼ c agave
¼ c protein powder
1 tsp vanilla
2 T coconut oil

 

Directions:

  1. Stir all ingredients together in a medium bowl until thoroughly mixed. For best results, cover and let chill in the refrigerator for half an hour.
  2. Roll into balls of whatever size you would like. (Mine were about 1″ in diameter.)
  3. Store in an airtight container and keep refrigerated for up to 1 week or place them in the freezer (my fav).
  4. Makes 20-25 balls
